Is that a Zucchini in your pocket…? Mini Turkey-Zucchini Burgers with Tzatziki Sauce

We unintentionally brought home a human-baby sized zucchini from the Portland Farmer’s Market.  I swear, I had every intention of returning this behemoth to its rightful owners (our friends who purchased it for all of $2) but this zucchini had other plans and instead managed to stow away in my suitcase headed for the bright lights of Las Vegas–sorry Janette!  We spent almost all day Memorial Day making things with this giant zucchini! White Bean and Turkey Chili and a Forced Rest Period

It’s been a little over a week since the last recipe I posted and I wanted fill you in as to where I’ve been.  Well, for the most part, I’ve been on my couch, wearing my floppiest, baggiest clothes and sleeping on and off–believe me, I wish I were off doing something a lot more fun. Last Friday I underwent a major surgical procedure and was in the hospital for a few days, but now I’m at home recovering.  It’s so difficult to sit still and do nothing, but at the same time, doing just about anything tires me out so much that I just end up, well, sitting still and doing nothing anyway.  Every day, I feel a tiny bit better, although the overachiever in me thinks I should be up and about and back to normal by now!  This could not be farther from the truth and even surfing Pinterest tires me out!   Good thing I have Season 3 of Downton Abbey to catch up on!   So, while I don’t have …

A Healthy Burger and Tarragon-Caper Mayonnaise

So, today, I was really craving a hamburger.  A big, juicy, drippy hamburger filled with all things naughty.  The only thing, was that the Man of the House had asked me to make something light and healthy for dinner.  It was a fair request, since he’d been on a business trip all week, which usually means lots of restaurant dining (poor guy, right?). So, a good compromise was a turkey burger.  I know what you’re thinking: turkey burgers have the reputation of being rather dry, boring and short on flavor. With that in mind, I set out to create a burger that was juicy and flavorful and would fulfill that naughty burger craving.
